Food Dietary Restrictions

With the increasingly globalized world, we are exposed to different countries and their cultures. Food being one of the key cultural identity, we learned and are more aware about the various food practices, health beliefs and religious traditions. This eventually leads to a wider range of food dietary options available for the global consumer, and it includes vegetarian food, Halal food, Kosher food, and meals for health and allergy reasons (e.g. nut-free, lactose/gluten-intolerant, non-seafood, etc.). All these food dietary choices are evident in established food industries and businesses, as shown in our in-flight meals. Food testing, labeling and certification are required to verify and ensure that these foods are what it claim to contain.

Food allergies are known to be caused by an excessive immune response to specific proteins in foods, and to prevent unexpected contact with allergens, labeling of allergens contained in foods is required. . ELISA and PCR methods are mainly used to detect food allergens, but recently, highly sensitive simultaneous analysis methods using LC-MS have also been used both domestically and internationally.
